Baio is single-farm, 100-percent organic Galega olive oil. It is an early harvest EVOO from non-irrigated traditional olive groves planted in 1903. It is also medium fruity olive oil with notes of green apple, green olive leaf and a slightly spicy finish. The olives are cold-pressed directly after harvesting, and all harvesting is completed by hand.
