Olio della Valle is produced at a single estate in Vieste. The trees are located within the protected Gargano National Park on a hillside overlooking the Adriatic Sea and the village of Vieste. A nearby private mill is used to minimize any cross-contamination. The Coratina varietal has good fruitiness, low bitterness and elevated spiciness with notes of freshly cut grass, green apple and artichoke.
