Origin

Ripalta Colli Orvietani PDO blends Moraiolo, Frantoio and Leccino olives. It is a bright green oil with a medium-robust flavor, featuring strong bitter and spicy notes that evoke almond, artichoke, and arugula. The oil also has aromas of fresh almond and pink pepper. As part of the PDO Umbria certification, an analysis of Ripalta shows a very high polyphenol content and an acidity that has never exceeded 0.2%. It is particularly well-suited for red meat dishes and other savory foods.
